As a beginner, I know it can be hard to tell if your starter is active & ready to use. Sourdough can feel like an experiment, resulting in a lot of trial and error. The question I get asked most often, is what happens if I forget to feed my sourdough starter? Is it bad? Should I throw it out and start over?
The short answer is usually, NO. Your starter is not bad(NOTE: if your starter ever starts to form mold, throw it out immediately and start over with a new starter). In-fact it’s actually quite hard to kill your sourdough starter unless you’ve neglected it for a long period of time. When your starter has gone without a feeding for quite sometime, the active bacteria and yeast will start to die off, causing a liquid to form on top, which is called hooch. This liquid may appear dark in color & cause you to believe your starter has gone bad, but that is not the case. It just means your starter needs to be feed immediately, to reactivate those cultures- but first, dump off the liquid of inactive yeast.

If you find yourself having a hard time keeping up with a sourdough starters daily feeding, place it in the fridge to slow the fermentation process down. Every so often (every 1-3 months) remove your starter from the fridge, remove the hooch, and properly feed your starter- equal parts flour, water, and starter. Although I do recommend choosing one day a week to work with your starter. Try a new recipe or technique to help build your confidence, working/baking with sourdough.
